Chelsea Cole was given an immersion circulator for her 27th birthday and it totally changed the way she cooks. At first she stuck to the usual suspects when sous viding (yes, that’s her verb of choice): tri-tip, flank steak, ribeye… and other beef cuts. But then she started dipping her toes into sous vide egg bites, stuffed burgers, and cheesecake, and realized just how much this thing could do. Let’s be real, though: she still eats a lot of steak.
This book is full of recipes with short ingredient lists that you’d cook any given day, not just for special occasions. Way better overnight oats, smoky pickles, and garlicky mashed potatoes are among the many things you’ll learn how to cook in this book.
Everyday Sous Vide: It's All French to Me
This cookbook is filled with really tasty recipes that are easy to follow, inexpensive to make, and taste amazing. I was really new to using my sous vide cooker, and this book had lots of helpful hints and tips/tricks about how to use an immersion circulator...Easy to use and approachable for beginners, but in-depth enough to move beyond just covering the basics. I like it so much I bought her follow-up recipe book, Sous Vide Meal Prep.
This cookbook is visually stunning! The author explains the process of sous vide cooking in easy to understand language and the recipes I’ve tried have turned out beautifully. (Love the egg bites!) I was hesitant to attempt sous vide, but now love it for perfectly cooked meats...oh, and the cheesecake! I highly recommend this book for anyone wanting to learn about sous vide and for flavorful, yet easy to prepare recipes.
I've followed Chelsea's blog for years. Her food is always delicious and beautiful. When I heard she was writing a cookbook, I was ecstatic! All of the recipes I've made from this book have been amazing. So far, I've done some stuffed burgers, a liquor infusion, and so. much. steak. If you're new to sous vide, or just want a cookbook with some really solid sous vide recipes, please pick this up! You won't be disappointed. I recommend it to all of my friends and their sous vide-loving significant others.
